Related and yet so different. While yellow mustard is mainly used in European pots and pans, in India the black spiciness is favoured. The dark mustard seeds create an explosion of flavour in fish and vegetable curries, spicy soups, chutney and marinades. Briefly roasting them brings out a nutty flavour.
